Rhubarb Custard Pie
Makes one 9" pie

Make a pastry for a one-crust pie and line pan.
Ingredients:
3 eggs
3 Tbsp. milk
2 cups sugar
¼ cup all purpose flour
¾ tsp. grated nutmeg
4 cups finely cut up rhubarb
1 tsp. butter
Directions:
Beat eggs and add in milk. Combine egg mixture with sugar, flour, nutmeg and blend well. Fold in the cut rhubarb. Pour mixture into pastry lined pan, dot with butter. Bake at 400 degrees for 50-60 minutes until browned.
