SAUSAGE BLOSSOMS

Yields 24 appetizers

Won ton wrappers make this appetizer a snap to put together. The wrappers look like flower petals or blossoms, creating a pretty cup to hold the spicy sausage and cheese mixture.

1 lbs Italian sausage, casings removed. (Or pick up bulk mild or spicy Italian sausage in same area)
1 cup shredded Colby Jack cheese
1 cup bottled salsa
1 pkg. wonton wrappers (freeze leftovers for another time)
Sour cream for garnish
Chopped green onions

Over medium heat, brown sausage in skillet, stirring until crumbly. Drain off any excess grease. Remove from heat and add Colby Jack cheese and salsa, stirring until cheese is melted.

Press won ton wrappers into miniature muffin cups, leaving edges extending upward. Spoon a heaping tablespoon of sausage mixture into each cup. Bake at 350 degrees for 10 minutes or until won ton edges begin to brown. Remove to a serving platter and let stand for 5 minutes. Spoon a small amount of sour cream on top of each sausage blossom, and sprinkle with chopped green onions. Serve immediately.
