Baked Family Size Burrito
425 Degrees—18-20 Minutes—Serves 8
2 Plum Tomatoes thinly sliced
3 C diced cooked chicken
1/2 C chopped onion
1/2 lime juice
3/4 C thick & chunky Salsa
1 tsp. Southwest seasoning
1 clove of garlic=1 tsp. of minced garlic
1 1/2 C Mexican cheese
4 Large Burrito size flour tortillas
1 can of bean dip
Assorted toppings: black olives, avocados, sour cream
Mix chicken, onion, salsa, lime juice, seasoning & garlic, stir in 1/2 C cheese, microwave for 3-4 minutes. Mix well.
Arrange tortillas in a circle on a large pizza pan or stone with 1/2 of the tortilla over the edge of the pan. Spread the bean dip in a circle, beginning in the center and coming out to where the tortillas are at the edge of pan. Spread the chicken mixture on top of the bean dip. Fold over the hanging edge of the tortillas, bringing edges to center. Arrange tomato slices on the top in a circle, sprinkle remaining cheese on top to covering completely. Bake, cut into triangles. Serve with toppings.
